
Savory Seed Crackers You Can Make in One Bowl
Four seeds, water, salt, and a hot oven. No flour, no oil, no mixer — and they keep for two weeks.
We get asked a lot what we snack on when we're not eating our own product. This is one of them. It's a seed cracker that comes together in one bowl, uses no flour and no oil, and costs a fraction of what the equivalent bag costs at the grocery store.
The trick is that chia and flax form a gel when they hit water. That gel is the entire binder — there's nothing else holding these together.
Ingredients
- ½ cup sunflower seeds
- ½ cup pumpkin seeds
- ¼ cup chia seeds
- ¼ cup ground flaxseed
- 1 cup water
- ¾ tsp salt
- 1 tsp of whatever you like: smoked paprika, garlic powder, everything-bagel seasoning, cracked black pepper, or rosemary
Instructions
- Heat the oven to 325°F and line a sheet pan with parchment.
- Stir everything together in one bowl. It'll look like seed soup. That's right.
- Let it sit 10-15 minutes. The chia and flax will absorb the water and it'll thicken into a spreadable paste.
- Scrape the mixture onto the parchment and spread it as thin as you can — an offset spatula or the back of a spoon works. Thin is the whole game here. Thick spots stay chewy.
- Bake 30 minutes, then pull the pan out and score the sheet into squares with a pizza cutter or knife.
- Flip the whole sheet over, peel off the parchment, and bake another 25-30 minutes until the center squares snap cleanly.
- Cool completely on the pan. They crisp as they cool, so don't judge them hot.
Notes
Thin, thin, thin. Almost every failed batch is a batch that was spread too thick. If the middle is still bendy after the second bake, put it back in for another 10 minutes.
Storage. Airtight at room temperature, about two weeks. If they soften, 5 minutes in a 300°F oven brings them back.
Variations. Swap half the sunflower seeds for hemp hearts. Add 2 tbsp of nutritional yeast for something closer to a cheese cracker. A teaspoon of chili flakes and a little lime zest is very good.
Why Seeds
Sunflower and pumpkin seeds bring protein and minerals like magnesium and zinc; chia and flax are among the better plant sources of omega-3s and are what make the whole thing hold together without flour. It's a lot of nutrition for a cracker, and it's four ingredients you can pronounce.
